Tri-Color Pasta Salad
I always make this dish for my Memorial Day BBQ. Whether I am having a BBQ or going to one. This beautiful dish makes any table stand out. In this recipe I use tri-color spiral pasta but you can use any type or shape of pasta that you desire. I think the tri-color pasta just makes it look more pretty and add so much color to your dish.
Ingredients

1 pound box tri-color rotini noodles

1 red bell pepper , chopped

1 green bell pepper , chopped

2 cups cherry tomatoes , sliced in half

1/2 red onion , sliced

1 cup sliced olives

8 ounces small mozzarella balls

1 cup Italian dressing or vinaigrette , more if desired

2 Tablespoons fresh parsley or basil , chopped
Instructions

Cook pasta according to package. Drain and rinse under cold water.

Combine all of the ingredients in a large bowl and mix together.

Pour Italian dressing over the top and sprinkle with fresh parsley or basil. Refrigerate until ready to serve. Top with parmesan cheese if desired.
