Bruschetta with Broccoli Rabe

If you are like me and love Broccoli Rabe than this appetizer is for you. This is my go to appetizer for Valentine's Day because my husband and I both love it. I make it special for us to enjoy. However, you can make this for any occasion and/or holiday. The Broccoli Rable is flavorful and I add salt, pepper and lots of garlic. Top it with Mozzarella Cheese on top of crusty baked bread and its unbelievable. Try this recipe and you won't be disappointed.

  • 1 bunch fresh broccoli rabe
  • 4 slices of Italian bread
  • 4 slices of smoked mozzarella
  • 2 garlic cloves
  • salt and pepper
  • olive oil
Instructions
  1. Toast the Italian bread on the grill or in the oven.
  2. Saute` the broccoli rabe with olive oil and garlic. Add salt and pepper to taste.
  3. Top toasted Italian bread with broccoli rabe and add one slice of mozzarella over the top. Put the bruschetta in the oven until the mozzarella melts. Serve immediately.
