We usually serve it on Thanksgiving as this is when the cardones are in season. They are an Italian favorite in my house.
My father and husband look forward to this treat every year.
The cardone looks like a celery stalk but is much tougher. You need to boil the stalks in water with salt and lemon first to make them softer than you are ready to dredge and fry them. They are so delicious you will not be disappointed.
