Fried Cardones

Fried Cardone is one of my families favorite holiday appetizer. We usually serve it on Thanksgiving as this is when the cardones are in season. They are an Italian favorite in my house.
My father and husband look forward to this treat every year.
The cardone looks like a celery stalk but is much tougher. You need to boil the stalks in water with salt and lemon first to make them softer than you are ready to dredge and fry them. They are so delicious you will not be disappointed.

  • Clean cardone, cut off base, tips and trim any leaves. Cut cardone in 3-4" lengths. Then wash cardone in cold water.
  • Place the clean and cut Cardone in a pot with water. Cook for about 15-20 mins or until tender.
  • In a bowl put in the bread crumbs, add the grated cheese, parsley, salt and pepper and mix. Beat raw egg in another bowl.
  • Dip pieces of the cardone into the raw egg and then roll the cardone in the seasoned bread crumbs.
  • Place them on a plate until all of them have been breaded. To fry them, add some olive oil to the frying pan, heat and add the cardone. Cook until tender and golden color.
